I'm Peelin' the Love. Are you?

Hey y'all!  Have I ever told you what my favorite fruit is?  No?  It's the banana.  I love everything that I've ever tasted that's made with bananas.  Banana bread, banana sandwiches, banana in my oatmeal, banana ice cream, banana everything! 



Did you know that bananas are super healthy?


  • They help regulate and/or lower blood pressure
  • Studies have shown that kids who eat a banana a day are 34% less likely to develop asthma
  • Bananas can help reduce the risk of childhood leukemia and they are associated with a lower risk of colorectal cancer
  • They support heat health and can help reduce a person's risk of cardiovascular disease
  • They help reduce the risk of stroke, muscle loss, and preserve bone density and aid memory
  • Lowers blood glucose levels in Type 1 diabetics and improve blood sugar, insulin and lipids in Type 2 diabetics
  • Can be used to treat diarrhea
When I was contacted by Dole to be a Blog Ambassador for their Peel the Love Tour I was so excited.    What is Peel the Love?  It's a year long Dole campaign that celebrates the fun, irreverence, and whimsical side of bananas.  They are doing a Peel the Love "Banana Cabana" Tour that is traveling coast-to-coast.  It's going to cover 26 cities and luckily Jacksonville is one of them!

Here's one of my favorite banana desserts.  I even made this for myself for dessert on vacation!



Grilled Peanut Butter Banana


Ingredients

1 banana
1 T PB2 mixed with .5 T water
1-2 T sugar free maple syrup
Cinnamon

Directions



  1. Spray a piece of aluminum foil with pan spray
  2. Slice your banana in half lengthwise and lay on the foil
  3. Spread the PB2 on one half, sprinkle with cinnamon and drizzle half of the syrup
  4. Put the two halves back together, drizzle with the other half of the syrup, and wrap the tinfoil tightly around the banana
  5. Place on the grill for 10-15 minutes until the banana is warm, soft and brown.
  6. Let cool for 2-3 minutes before eating
{It can also be done in a 350 degree oven for 15-25 minutes}

Option 2:  
Directions
  1. Wrap whole banana in sprayed tinfoil
  2. Grill for 10-15 minutes
  3. When it's cool enough to handle {but still warm} mush it with a fork
  4. Lay out 8 graham cracker halves
  5. Spread PB2 on 4 halves, and top with a chocolate square.  
  6. On the other 4 halves spread a thick layer of the warm banana mush.  
  7. Put a PB2 cracker and a banana cracker together
Voila!  A Peanut Butter Chocolate Banana S'more!  Perfect, healthy camping dessert!

Christmas Cookies

Until last year I never did Christmas presents for the girls' teachers.  I don't know why but, I just didn't.  {Does that make me a horrible parent?}  But, last year I decided to do cookies for them. I figure that I would want edible gifts if I was a teacher.  {I mean seriously, how many "World's Greatest" or "#1 Teacher" mugs and knick-knacks does a teacher need?!??}

Last year I made "traditional" cookies, loaded with butter and sugar.  After the fact I decided that I wasn't being true to me by making them like that.  A vegan wouldn't buy eggs to make cookies with.  Someone who follows the Paleo diet probably wouldn't make non-Paleo cookies.  Why am I going to make cookies that I wouldn't even feed my kids??  I decided to alter all the cookies, except 1, to be low fat.  People love the flourless peanut butter cookies so I make them every time I need to bring cookies somewhere.  




Peanut Butter
From Martha Stewart
makes 16

Ingredients
1 cup peanut butter
.75 cup sugar
1 egg
.5 t baking soda

Directions

  1. Preheat oven to 350.  
  2. Mix together all ingredients
  3. Roll 1 Tablespoon of dough into balls and place on cookie sheet
  4. Bake for 12-14 minutes.  Rotate halfway thru.
  5. Cool on pan for 5 minutes before transferring to cookie sheet. 


Chocolate Chip
From: Happy Herbivore Light & Lean
Makes 16

Ingredients
.33 cup plain applesauce
.5 cup brown sugar
1 t vanilla
.25 cup nonfat milk
1 cup flour
1 t baking powder
1 T cornstarch
.5 cup chocolate chips

Directions

  1. Preheat oven to 350.  Grease cookie sheet
  2. Combine all the wet ingredients in one bowl and the dry ingredients (except chocolate chips) in another.
  3. Mix the dry ingredients into the wet
  4. Fold in chocolate chips
  5. Drop on cookie sheet and bake 7-10 minutes.  Rotate halfway through.  



Oatmeal Raisin
Quaker Oatmeal "Raisin" Cookies
This recipe originally calls for chocolate chips but, I substituted raisins and dried cranberries for the chocolate chips
makes 5 dozen

Ingredients
2 cups pureed zucchini
1 cup brown sugar, packed
.5 cup sugar
2 eggs
2 T milk
2 t vanilla
1.75 cup flour
1 t baking soda
2.5 cup oatmeal
4 cups dried fruit (I used raisins and cranberries)

Directions

  1. Heat oven  to 375
  2. Mix zucchini puree and sugars together
  3. Add eggs, milk and vanilla
  4. Mix in flour, baking soda, and oatmeal.
  5. Fold in fruit
  6. Drop by the tablespoon on a greased cookie sheet.  Bake for 9-11 minutes.

Banana Bread
Adapted From:  Cook This, Not That 350 Calorie Meals

Ingredients
4 ripe bananas (about 2 cups)
.75 cup Greek yogurt 
2 eggs
1 tsp vanilla
2 cups flour
.75 cup sugar (I start with .25 cups and figure out how sweet it needs to be)
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon

Directions
  1. Preheat oven to 350.  Grease a 9x5 loaf pan.  (I used a 4 loaf mini pan)
  2. Puree bananas, yogurt, eggs and vanilla in a blender or food processor
  3. In a separate bowl mix together the remaining ingredients
  4. Fold banana mixture into flour mixture
  5. Pour into pan and bake for 50 minutes until toothpick comes out clean.  The mini loaf pans take about 35-40 minutes  (if the top starts to brown before the inside is. done then put tin foil over the top)

Cookies For Breakfast

Seeing the look on a 4-year-old's face when you tell them that we are having cookies for breakfast is priceless.  "COOKIES??!!??  REALLY??"  Well, these cookies are the perfect breakfast item.  Low calorie, fat and sugar.  Kaylee and Mo were only surprised when I told them "You can't have more than 4."  You should definately try these for breakfast tomorrow.  Make sure to keep them in the fridge since they don't have any fat.  The only fat in them comes from the oatmeal.  No fat = no preservatives which means that they will rot if you leave them on the counter.

I made these because I had a bunch of overly brown bananas and needed something to do with them yesterday morning.


Super Banana Breakfast Cookies
Adapted from: Watching What I Eat: Banana Oat Breakfast Cookies
Makes 12 cookies
Calories: 82
Fat: 0.8g
Sugar: 7.0g
Protein: 1.7 g

1 1/2 cups oatmeal
3 bananas
roughly 1/2 cup unsweetened applesauce
1/3 cup craisins
1 tsp vanilla extract
1 tsp cinnamon  or pumpkin pie spice

Directions
  1. Preheat oven 350
  2. Mash 2 bananas and mix with vanilla
  3. Mash the 3rd banana and add enough applesauce to equal 1 cup. (mash the banana then put it in your measuring cup and top it off with enough applesauce to reach 1 cup)
  4. Mix everything together
  5. Let rest for 10 minutes
  6. Drop onto cookie sheet and bake for 20-30 minutes.

They are perfect for the on-the-go morning family.  Oh and if you wanna be fancy you can whip up a maple glaze for the top.  Combine a bit of maple syrup with some powdered sugar and drizzle on top.  YUM!

Baked Marshmallow Bananas




The dessert I made for our Iron Chef competition was so simple.  I'm not going to lie, I picked Baked Bananas with Roasted Marshmallows because it's what I wanted for dessert.  It would have been prettier if I had a blow torch to roast the marshmallows with.

Bananas have a whole bunch {pardon the pun} of health benefits.

  • The average banana has 467 mg of potassium.  It may prevent high blood pressure and atherosclarosis.
  • They protect against stomach ulcers
  • Slow digesting
  • Good source of fiber
  • Helps your eyesight
  • Promotes kidney health
This dessert hits the spot for me though.  Healthy, sweet, simple, and it has a bit of crunch.

Baked Bananas with Broiled Marshmallows
1 banana
1/2-1 tsp cinnamon (depending on taste)
1 T sugar free maple syrup
1/4 cup mini marshmallows (enough to cover the top of the ramekin)

Directions
  1. Preheat oven to 400 degrees
  2. Spray small ramekin with pan spray
  3. Slice banana into small chunks in a medium bowl
  4. Sprinkle with cinnamon and maple syrup and toss to coat (or you can just put it all ontop of the bananas in the ramekin)
  5. Bake for 10-15 minutes until soft. 
  6. When it's done turn broiler to HIGH and top bananas with marshmallows
  7. Place ramekin back in oven on top rack and broil for 1-3 minutes until marshmallows are brown and charred {watch them carefully!!  They go from slightly brown to burned VERY quickly}

I personally like mine slightly brown and Ken likes his basically burnt.  How much you roast them is your personal preference.  I bet that apples would also taste good under the marshmallows.

National Banana Bread Day

Bananas.  One of my most favorite fruits.  I actually eat a banana 6 mornings a week (occasionally 7.)  So when I found out that today was National Banana Bread Day I couldn't help but jump on it!  I wanted to put my own spin on the day though.  Banana Bread Pops using my new never been used cake pop pan.

Why make pops?  Well, for one, I wanted to use my pan and since we are on the health train in this house, cake doesn't make an appearance often anymore.  I also like to do things differently.  I like to be unique.  Plus, it's conveniently pre-portioned for you!

This recipe was taken out of my handy-dandy very loved Cook This, Not That!  350 Calorie book.  It made 36 cake pops and one large muffin.  For the nutritional I just put in 36 servings so, it's actually a bit lower in calories then the facts say because I'm betting the muffin was equal to 3 or 4 pops.




Ingredients 4 large ripe bananas
3/4 cup grated carrots (you could also use zucchini, but if you do make sure you squeeze out all the water)
2 cups white or whole wheat flour (I used 1 cup of each)
1/2 cup greek yogurt (I actually used fat free vanilla regular yogurt)
Egg substitute equivalent to 2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder

Direction
  1. Preheat oven to 350
  2. Mash your bananas (I like to give them a whirl in my food processor to make sure they are fully smushed)
  3. Mix together the bananas, yogurt, egg substitute (or egg whites), and vanilla
  4. In a separate bowl mix together carrots, flour, baking soda and baking powder.
  5. Stir dry ingredients into the wet
  6.  Spray your cake pop pan and fill each hole with batter
  7. Bake for 25-30 minutes until done
  8. Let cool in the pan for 10-15 minutes and then place on a cooling rack
  9. Repeat steps 6-8 until all your batter is gone.


Look at the calories.  It's crazy!   Only 44 calories per serving and 0.1 gram of fat!  These are going to be my new snack for after the gym.

Mental Fitness

After 2 days of walking on the beach at sunrise by mental clarity has been greatly helped.  My physical fitness has been helped also though.  I walked 3 miles and did 12 minutes of stairs.  On the downside I've been overloading on the desserts.  

Today's dessert was actually quite diet friendly.  It was banana soft serve.  I was inspired by the Yonana machine.  


If you've never heard of the Yonana machine it's an ice cream maker that you put frozen bananas into and it turns them into soft serve.  You can also add other mix-ins so it's not just plain banana soft serve.

Banana Soft Serve
5 bananas
1 T peanut butter (optional)
2 T milk

  1. Put all ingredients in blender and blend until smooth.
  2. Place the banana puree in an ice cream maker and freeze.  (I ran my ice cream maker for about 25 minutes)
No ice cream maker?  No problem!
Use your food processor instead of blender.  Freeze the bananas for a few hours before pureeing and leave out the milk.  Process until smooth.

Sorry I didn't get a picture.  Honestly it's not a very photogenic dessert.  BUT, it is delicious.  Low in calories and loaded with vitamins and minerals.
