Frozen Yogurt is the Devil!

Farmers Market Friday is back!

Here's a list of all the things I bought today.

Eggplant
Creamer potatoes
Brussel sprouts
Kiwi
Bananas
Apples
Peaches
Carrots
Green onions
Tomatoes
Green peppers
Jalepenos

Frozen yogurt has been my downfall the past few days.
It's just so darn good!  Espresso Chip low-fat frozen yogurt from Publix is AMAZING!  I've been meaning to try some fat free fro-yo recipes and wanting to cut calories is a perfect reason to try them out.

Today I got back on my health wagon.  I took the girls to the pool and I took the dogs for a walk on the beach.  It only lasted 20 minutes due to a nice oncoming rainstorm.

After I got home I recieved a call from the detective handling my ring case.  Looks like I need to take both of my dogs in for x-rays to make sure that they didn't eat my ring.  After losing a very expensive, very sentimental item like an engagement ring some people would look at the "glass" half empty but, honestly I can't.  I can't look at it half full or half empty.  My glass is just half.  Not empty, not full, just half.

Tonite was taco night.  Vegetarian taco night.  The girls love having tacos.  Taco night is only second to sushi night in favorites.  This is a great quick meal.  I served it with shredded lettuce, tomatoes, salsa, sour cream and cheese.

Vegetarian bean taco filling
2 cans black beans, drained and rinsed
1 can corn
1 can mexicorn
1 large onion, diced

  1. Sautee onion until soft
  2. Add corn with juice and mexicorn
  3. After a few minutes add black beans and heat through
Simple right?

What is your favorite simple meal?

Gotta Get My Veggies

Today I spent $53 at the market.  Here’s what I brought home.

It was a gorgeous day to goto the farmers market.  Bright blue sky, not to hot, just perfect!  I got a lot of great stuff.  I decidd to buy some Gouda from the new dairy farmer.  I love cheese and can’t pass up the chance to try something new.  I just wish cheese was cheaper.  The muffin man was back today.  I was so excited.  I bought one for Kay and Baye claimed one.  That leaves only 4 for me.  But I figure by them taking 2 they’ve saved me between 300 and 500 calories.  Mr. Amazing had me buy the bok choy so he can make us something special.  I love being married to a man that can cook.

My friend took my kids to a movie at Kay’s school so I had a night to myself.  The first night withpout any kids in over 3 years.  I had grand dreams of a long swim and maybe a walk.  My swim lasted 20 minutes (I was completely worn out after 20 minutes (I have a long way to go before I can consider the Olympoics don’t I?)  It was great to be back in the water though.

Breakfast
Chiobani Blueberry
Banana

Snack
Blueberries
Grapes

Dinner
Peanut butter and jelly french toast  (I'll post the recipe soon)
Liquid egg substitute (leftover french toast dip)

Speaking of dinners, here's my dinner from a few nights ago.  Fat free taco salad.  Lettuce, sauteed mushrooms and onions, salsa, beans, sour cream and refried beans.

Farmer's Market Friday and April Goals

Farmer’s Market Friday

I had another great Friday at the Farmer’s Market.  I found out that they added a dairy vendor to the market.  I'm going to have to up my market budget every month!  I love taking Kay and Mo with me.  We always have interesting conversations and a good time.  I also feel like I’m teaching them valuable lessons about food, money and shopping locally among other things.  The only downside was that my muffin man wasn’t there today.  A whole week without muffins!  What am I going to do?  How am I going to survive?!?!??  But I got a lot of good stuff, mostly stuff that I needed for Easter dinner.  I’m hoping I got enough to last us the whole week too.  But if not I’m willing to go to the grocery store to supplement my veggie needs.  Okay this week I spent only $40.  (I saved $15 by not getting my muffins)

Here’s everything I got:

2 bunches of bananas
2 containers of strawberries
2 pounds of mushrooms`
Medium bag of kettlecorn (Mo and Baye shared a bag today)
Celery
4 yellow onions
2 red onions
2 ¼ lbs of baby potatoes
1 lb of spinach
1 lb of baby carrots
Jar of strawberry jam

Not pictured:
5 honey sticks
Gummy worms

Last night I decided I needed monthly goals for myself.  I'm going to keep track of whether I do (or don't do them) every day.  I'll let y'all know how I did at the end of the month.  Here they are:
1)      Get my waist measurement under 27
2)      Weight at or below 115
3)      Stop snacking
4)      Exercise everyday
5)      Cut out 99% of the fat from my diet
6)      Cut out 95% of all sugar
7)      Cut out 90% of all processed/packaged food
8)      Make it 12 days without sugar (April 9-19th)
9)      Limit carbs to 2x per week

Do you have goals for yourself?

Farmer's Market Friday

Dear Farmer’s Market,

I love you!!!

Sincerely,
KT the Fat Free Queen

The vendor at the Farmer's Market I get my produce from

I adore Fridays.  To most people Fridays mean the last day of work before the weekend, relaxing and fun.  To me it means going to the Farmer’s Market.  The nice thing about living in Florida is that we have the Farmer’s Market year round.  So I can still get fresh, locally grown produce in December the same as I can get it in June.
The one here is about 15 minutes from my house.  It’s open on Fridays and Saturdays.  I always go on Fridays because Kay and Mo are in school, I’m already up getting kids to the bus stop, and there are (in my opinion) better vendors there on Friday.
Honestly I only started  doing a weekly trip to the Farmer’s Market in February.  Before then I would go from time to time and pick out whatever looked good but, it wasn’t serious.  In February I went once to look around and for some reason something changed in me and I became hooked.  I buy 95% of the produce that I need for the week plus some extra fruits and vegetables that look good or that the girls want.  I like shopping there because I save some money, I’m supporting the local businesses and my produce is locally grown.  After 2 months of being a weekly face at certain vendors they know my face and what I like and don’t like.
This trip was a little different than my normal trips.  I spent a little more than normal and bought things I don’t normally buy.  I had Kay and Mo with me so, they wanted a special treat.  Baye gets a bag of kettle corn every week.  That’s her treat for being good while I do my shopping.  She knows I go buy my produce (I use the same vendor every week), then we go get her kettle corn and after that we finish our shopping.  Another reason that I spent differently then normal is because we’re getting ready to go camping on Monday so I needed stuff I don’t normally get.
My Farmer's Market finds for the week

I spent $49 and here’s what I got:
Bananas
A lot of apples (I needed them to make apple chips and for the girls on the trip)
Some dried strawberries, pumpkin seeds, and sunflower seeds (for trail mix)
Kettle corn for Baye
Gummy worms for Mo
Licorice for Kay (she regretted this decision)
Portobello Mushrooms
Baby portabellas
Sweet potatoes
A container of pineapple
AND MUFFINS!!!

I am addicted to the muffins that are sold at the market!  These muffins are worse than crack.  I buy 5 and get one free.  I spend $15 a week on these muffins.  They are excellent!  Hugo is the man who makes them.  They’re all low-fat (he has a few that are fat-free but you have to special order them)  If you are in the Flagler County, St. Augustine area then you have to try Hugo’s Muffins.  I can’t live without them.

What’s your idea of a fun Friday?
