Greek Yogurt FroYo

It was close to 80 today!  Spring is finally back!  I'm so excited.  The next week is supposed to be gorgeous and I plan on spending as much time enjoying it as possible.  

Monday was crazy.  So many exciting things happened.  My study materials came, I met with my trainer, my body fat measurer also arrived.  Tuesday was insane due to running errands and Mantha had her opening nite for the yearly musical that the school does.  Today my coach sent my first workout and meal plan.  My nutrition is super tight.  Did you know that March is National Nutrition Month, a month designated to focus on making healthier food choices for better overall health and wellness?  This year the theme for Nutrition Month is “Enjoy the Taste of Eating Right,” which is easy when you include California dairy products. 

The California Milk Advisory Board, which represents more than 1500 dairy families, is celebrating “dairy good” nutrition by asking Recipe ReDux members to “lighten up” some of their favorite recipes with California dairy.

In addition to calcium benefits, dairy in any form – whether it’s low-fat milk with cereal, a yogurt parfait, a smoothie, or egg and cheese sandwich – packs protein – which helps keep you full until your next meal. The California Milk Advisory Board and their nutrition partner, The Dairy Council of California, understand that dairy plays a vital role in contributing to an overall healthy diet and in support of National Nutrition Month wants to encourage everyone to adopt healthy food habits with dairy.

Recipe ReDux members are being challenged to lighten up their favorite recipes using at least one California dairy product as an ingredient in recipes for breakfast, lunch, dinner, side dish, snack, appetizer or dessert. 

Real California Milk and dairy products are sold nationwide and can be identified with the Real California Milk or Real California Cheese seals on packaging. California is the number one dairy state in the U.S., producing more butter, milk and ice cream than any other state. California is number two in cheese and yogurt production. 

I decided to lighten up one of my favorite desserts, frozen yogurt.  I love this recipe.  Sweet, creamy frozen yogurt that is actually healthy.  Yes, you heard right!  HEALTHY!
  The girls asked me to turn it into milkshakes for them.  





Fat Free Mixed Berry Frozen Yogurt
Makes approximately 2 quarts (8 - 1/2 cup servings) 
Calories:  99
Fat:  0.2
Carbs:  15.5
Sugar:  13.3
Protein:   8.5

Ingredients
.5 cup skim milk
.25 cup fat-free dry milk
2 T sugar
2 t plain gelatin
1.33 cup skim milk
2 cups mixed berries {I used a mixture of strawberries, raspberries, blueberries and blackberries}
.66 cup sugar
1 t vanilla
2 cups California fat free plain Greek yogurt


Directions


  1. In mixing bowl combine .5 cup skim milk and dry milk
  2. Put bowl and beaters in the freezer for 30-45 minutes.
  3. While the bowl is in the freezer puree strawberries with the sugar. {you can leave some out and dice them if you'd like some chunks}  Set aside
  4. Bring the bowl out of the freezer and beat on high until it reaches soft peak.  Add sugar and beat until stiff peaks form.  Refrigerate until ready to use
  5. In a saucepan combine gelatin and 1.33 cups of milk.  Let it sit for 1 minute then cook over low heat until gelatin dissolves.  Set aside
  6. Combine strawberries, gelatin, vanilla and yogurt.  
  7. Fold in whipped dry milk.
  8. Freeze in an ice cream maker and place in freezer for at least 1 hour

I Scream, You Scream, We All Scream For....ICE CREAM!!!

Little known fact about me....I want to open an ice cream shop.  True story! But, until the time comes where I can afford to open one {if anyone would like to donate money to help open my shop just let me know!}  I regularly make ice cream for the kids in my Cuisinart ICE-50BC.  I love this machine.  I've had it for over 4 years and it's still in great condition and works excellently.  Cuisinart is an awesome company and their products are super sturdy.  

I love trying new flavors and mix-ins.  Many times I make them into ice cream sandwiches and I even made Mantha an ice cream cake for her birthday.  Sunny really wanted to make ice cream so, we made these.  The banana one isn't as creamy as normal frozen yogurt but, it's really delicious.  If you don't have an ice cream maker you can freeze it then puree it in a blender or food processor.



Both recipes are adapted from The Ice Cream and Frozen Yogurt Cookbook by Mable and Gar Hoffman

Banana-Maple-Peanut Butter Frozen Yogurt

Calories --64
Fat -- 0.7g
Sugar -- 6.5g
Protein -- 3.2g

Ingredients
2 bananas
1/2 cup sugar free maple syrup
1 T lemon juice
.5 cup fat free milk
1 cup plain yogurt

Directions
  1. Puree first 3 ingredients in food processor until smooth
  2. Stir in milk and yogurt
  3. Freeze in ice cream maker

Chocolate Peanut Butter Fudge Ice Cream
Calories  -- 243
Fat -- 15.7g
Sugar -- 18.5g
Protein -- 5.5g

Ingredients
1 cup chocolate chips
2 cups milk (I used fat free and that's what the calorie count has in it)
.5 cup sugar
.5 cup chunky peanut butter
2 cups half and half (plain creamer will also work)

Directions
  1. Combine chocolate chips, milk, and sugar in a saucepan.  
  2. Heat over medium until the chocolate is melted.
  3. Stir in peanut butter and melt.
  4. Cool completely
  5. Stir in whipping cream and freeze in ice cream maker

Out and About at 6 A.M.

Frosting + Animal Crackers = Pure Heaven 

Do you agree?

Because of frosting and animal cracker, and cookies, (LOTS AND LOTS of cookies) I've gained weight.  Maybe they should start putting warning labels on sweets:  Warning!  Disastrous to your diet!

I decided to take Mr. Amazing's advice and go for a walk in the morning before the kids wake up.  I was amazed at how calming it was. I'm a morning person, no questions asked but, exercising at 6 a.m. honestly originally wasn't my idea of a fun time.  But after today I can't wait to go back tomorrow morning.  

There's only one thing that I hate about walking in the morning when the sun is barely up.  There are a bunch of random creepy crawlies out that aren't out when the sun is fully up.  I nearly stepped on 3 or 4 crabs.  I don't know why but crabs make me nervous.  I think it's the pinch possibility.  I've been pinched by a crab before at the beach and it's not any fun so, I  stay far away from them now.

I only walked 2 miles and I did 11 minutes on the stairs at the beach.  I've read some various blogs stating that real stairs are harder than the stairmaster at the gym.  I personally agree.  (When I find the websites again I'll post them, I promise!)  11 minutes on the stair climber would be no big deal but 11 minutes of real stairs wore me out!  

I came home tonite and ate about 1/4 of a carton of ice cream.  It was low-fat frozen yogurt but, I know it killed my calorie burn for the day.  After I started feeling guilty I tossed the rest of the carton away.  Don't worry there was only about 1/4 left in the carton.  

I know I wasted money but I couldn't have it in my house tempting me anymore.  It was ng me, laughing at me.  I did the same thing with a couple cans of frosting.  

How do you deal with things that are tempting you in the house?  Do you toss them or keep them?

Frozen Yogurt is the Devil!

Farmers Market Friday is back!

Frozen yogurt has been my downfall the past few days.  
It's just so darn good!  Espresso Chip low-fat frozen yogurt from Publix is AMAZING!  I've been meaning to try some fat free fro-yo recipes and wanting to cut calories is a perfect reason to try them out.  

Today I got back on my health wagon.  I took the girls to the pool and I took the dogs for a walk on the beach.  It only lasted 20 minutes due to a nice oncoming rainstorm.

After I got home I recieved a call from the detective handling my ring case.  Looks like I need to take both of my dogs in for x-rays to make sure that they didn't eat my ring.  After losing a very expensive, very sentimental item like an engagement ring some people would look at the "glass" half empty but, honestly I can't.  I can't look at it half full or half empty.  My glass is just half.  Not empty, not full, just half.

Tonite was taco night.  Vegetarian taco night.  The girls love having tacos.  Taco night is only second to sushi night in favorites.  This is a great quick meal.  I served it with shredded lettuce, tomatoes, salsa, sour cream and cheese.

Vegetarian bean taco filling
2 cans black beans, drained and rinsed
1 can corn
1 can mexicorn
1 large onion, diced


  1. Sautee onion until soft
  2. Add corn with juice and mexicorn
  3. After a few minutes add black beans and heat through
